We are moving....

While we appreciate all the help we have received over the last year. We don't feel that the blog is doing as well as it could and serving the purpose it was intended for. While we still want to help authors spread the word about there work, this just isn't working well for us right now.

So after the first of the year, we will be making a change and joining As You Wish Reviews. Some of you know I already help Julia and work with her on different projects, so it won't be too different just a new place to contact us.

Now we are not going to delete Confessions of the Paranormal blog, because we may decide to try again later on down the road. We will also be keeping the Facebook page and it will be used regularly to help promote authors. You can still send us FB msgs to share or post things, they will go up on the AYWR blog instead.

For those that have supported us, Thank you! Lauren and I are not leaving the book world we are just changing things up a bit to better support our friends new and old.

INGREDIENTS:

3/4 cup butter
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon peppermint extract
1 1/2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup semisweet chocolate chips

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. In a large bowl, cream together butter, white sugar, and brown sugar until light and fluffy. Beat in egg, then stir in vanilla and peppermint extracts. Combine flour, cocoa powder, baking soda, and salt; gradually stir into the creamed mixture. Mix in the chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.
3. Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on cookie sheets for 5 minutes before transferring to a wire rack to cool completely.

INGREDIENTS:

4 ounces saltine crackers
1 cup butter
1 cup dark brown sugar
2 cups semisweet chocolate chips
3/4 cup chopped pecans (optional)

DIRECTIONS:
1. Preheat oven to 400 degrees F (205 degrees C).
2. Line cookie sheet with saltine crackers in single layer.
3. In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
4. Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts (optional). Cool completely and break into pieces.

I made these when I was younger...My favorite part as a kids was sprinkling the chocolate chips on top,  watching them melt and breaking them up.



Day 11 Giveaway

All these questions and more are answered in this wild romp as Marious and Branith lead their band of merrymakers into the crowd for a little fun, and with those two in the lead you can’t help but ask, is anyone safe? The toddlers are definitely ready to join the celebration as they follow their leader into the spirit of the season as they all prepare to ‘Embrace The Light’

This is not as hard as you may think, I make them all the time. You can do them without the stick, but it does take longer that way. Seeing as the directions, along with different flavor options are long, I am just posting the link to the recipe. I hope you enjoy them as much as we do.

Ingredients
Cookies:

3/4 cup chopped semisweet chocolate
1/3 cup chopped unsweetened chocolate
3 tablespoons lightly salted butter
1 egg, room temperature
1/3 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/8 teaspoon baking powder
1/4 teaspoon kosher salt



White Chocolate Filling:

2 cups white chocolate, chopped
1/4 cup mascarpone, room temperature
1 tablespoon dark rum



For the cookies:

Preheat an oven to 350 degrees F.

In a metal bowl, combine both chocolates with the butter. Put the bowl over a pot of boiling water for a makeshift double boiler. Lower the heat so the water is hot but not boiling. Stir the chocolate with a plastic spatula, from time to time, until the chocolate and butter melt together. Set aside.

In a large bowl, whisk together the egg, sugar and vanilla. Beat until the mixture comes together and becomes a pale yellow color, about 1 minute.

Combine the flour, baking powder and salt in a separate bowl. Sift and add it to the egg mixture. Stir until blended. Using a rubber spatula, add half of the melted chocolate to the batter and gently stir to combine. Add the remaining chocolate and stir again until combined.

Drop tablespoonfuls of the cookie batter onto a greased baking sheet or a greased parchment-lined baking sheet. Leave room in between the cookies so they can spread out as they bake. You should be able to drop 18 cookies total, on the baking sheet, depending on their size.

Put the baking sheet in the center of the oven and bake for 4 minutes. Rotate the pan halfway and bake for an additional 4 minutes. Remove the pan from the oven and allow the cookies to cool, 10 to 15 minutes, before transferring to a plate.


For the filling:

Preheat the oven to 250 degrees F.

Put the chopped white chocolate into a baking dish, preferably not a metal dish, and melt it in oven. Remove it after about 10 minutes and stir. Put back into the oven and continue to cook until caramelized, about 10 minutes.

Meanwhile, whisk together the mascarpone and rum in a small bowl.

Add the caramelized chocolate to a medium bowl. Blend in the mascarpone mixture until combined. Refrigerate until the cookies have cooled.

Bring the filling to room temperature before spreading it between the cookies to make sandwiches.
